Glycyrrhetinic acid is formed by hydrolysis of glycyrrhizic acid to remove sugar and acid chains, and its sweetness is 250 times that of sucrose.
Glycyrrhetinic acid is A glycoside composed of two molecules of glycyrrhizic acid-ff glucuronic acid. White crystalline powder, sweet taste, sweetness is about 200 times that of sucrose. Its sweetness is different from that of sweeteners such as sucrose. It takes a while to get a sense of sweetness after the entrance, but it lasts for a long time. A small amount of glycyrrhizin and sucrose can be used together with 20% less sucrose and the sweetness remains unchanged. Although there is no fragrance, it has the effect of enhancing fragrance. Melting point (decomposition) 220°C.
